Using Tokushima's local Awa-odori chicken, the broth at Aian is light and hearty. The the soup is made using Awa-odori chicken, nutmeg, ginger and ginseng, based on Chinese medicine. so perfect for so you can choose from either Soy Sauce or Salt base soup. Slices of Awa-odori chicken, both poached and grilled, are placed on top of the noodles for an extra punch. They often have special menus on weekends.
